Ingredients

  • 3 ripe bananas (mashed)
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) sugar (white or light brown)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup (60ml) milk (or buttermilk for extra fluffiness)

Directions

  1. Preheat Oven & Prep: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. Mash & Mix: In a large bowl, mash the bananas. Add melted butter, sugar, eggs, and vanilla. Whisk until combined.
  3. Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Combine: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Stir gently until just combined—don’t overmix!
  5. Fill & Bake: Divide the batter evenly among the cupcake liners (about ¾ full). Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Enjoy: Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Fold in ½ cup of chocolate chips or chopped nuts for extra texture!
